Quick Weeknight Meals: Bar-B-Que Cups

More Calf Fries to Caviar. That's the name of the cookbook Bar-B-Que Cups comes from. I got this cookbook when I got married - which is just shy of 22 years! If you can brown ground beef and open a can of biscuits, this is a good busy day recipe for you!

The Recipe:
In a large skillet, brown 1 pound ground beef and 1/4 onion, chopped (unless you live in my family, and then omit the onion.

Drain and stir in 1/2 cup barbecue sauce and 2 tablespoons brown sugar.

Separate 1 10 oz. can of biscuits.

Place each biscuit in a muffin tin and press dough down to form a cup. Spoon in meat mixture. Sprinkle with 1/2 cup grated cheddar cheese. Bake at 400 degrees for 10-15 minutes or until golden brown.

The Good: Super easy, and you may already have all the ingredients. My picky teens loved these as kids and still chow down on them.

The Bad: Can't think of anything.
