I scrolled through one of my Pinterest boards, Saturday Snackin', to find a recipe for Slow Cooker 7UP Chicken and Rice from Six Sisters Stuff. I ended up taking a shortcut, though. My son's baseball scrimmage started at 1:00, and I didn't leave the stands until 5:00. I knew my family would be home shortly after that. My shortcut was to buy a Lemon Pepper deli chicken from HEB, skin it, and shred it. All of the ingredients went into the crockpot together and were ready in about 30 minutes.
The Good: With cantaloupe and green beans, I thought it was a good meal. There are lots of citrus flavors, so it would probably be good in the spring. It's also very easy to put together.
The Bad: The rest of my family didn't like it quite as much as I did. They hesitantly said they would eat it again.
Summary: This probably won't be a front-burner recipe for us, but it's worth a try.
