I have made these lots of times, mostly on Administrative Professionals' Day or end-of-year teacher treats. They are always a hit.
The Good: Easy to make, combination of apricots and lemon juice is good for spring.
The Bad: A little sticky, but nothing bad, really.
Summary: Apricot Squares were some of the first bars I thought of for IMPACT. Even though they are for teens, I wanted the students who didn't like chocolate to have an option. This is a stand-by recipe for me.
